Foie gras creme brulee
The amuse-bouche is a foie gras creme brulée with a smooth texture. The surface of the brulée is caramelized with cassonade (brown sugar) to create the red color. The red and green colors, which are indispensable as the main colors of Christmas, are created with strawberries and mint. Please enjoy the marriage of the sweet and sour taste of strawberries and the richness of foie gras.

Avruga caviar and dried mullet roe
The deep red color, which can be said to be the main color of Christmas, is created with squid, red cabbage, red quince, and beet dressing. Enjoy the spicy accents of "Beni Tade," the refreshing taste of lemon, and the richness of "Abruga Caviar" and "Karasumi Powder," which give it a glossy and gorgeous look.

The hot appetizer, reminiscent of a white Christmas, is based on white, with sautéed whitebait meunière and cauliflower velouté (sauce) garnished with gorgonzola. The falling snow is expressed with a mousseline made from milk, and pentas flowers are decorated as flowers blooming on the snow. The dish is finished off with a mellow truffle oil that gives off a scent that makes you feel like you are in nature.

Green apple and celery root salad
Season the seasonal John Dory simply with salt and pepper. Enjoy the light-flavored yet plump John Dory with a beurre blanc sauce made with Muscadet, a dry wine with a refreshing citrus acidity. Served with a salad of apples, celery root, walnuts and pistachios.

A main dish that makes full use of the Christmas color "green". Duck breast seasoned with salt and pepper and finished with roti, served with Banyuls sauce made with sweet wine. Quail latkes are served as a side dish. Quail has a mild flavor and is rich in umami. Enjoy it baked in a Christmas-like red wine sauce with mixed spices and fig puree.
