Foie gras creme brulee
Cheese tartlet
For the amuse-bouche, we have prepared a foie gras creme brulée with a smooth texture. The surface of the brulée is caramelized with cassonade (brown sugar) to create the red color. The red and green colors, which are essential for Christmas, are created with strawberries and mint. Please enjoy the marriage of the sweet and sour strawberries with the richness of the foie gras. In addition, enjoy the start of your Christmas dinner with the combination of the richness of the mellow cheese, the sourness of the berries, and the subtle sweetness of the rum in the cheese tartlet.

A wreath, an essential part of Christmas decoration, is made with squid, red cabbage, red walnuts, and beetroot dressing. Accents include the spicy red tade, karasumi powder to add richness to the dish, and luxurious caviar, one of the world's three great delicacies, making this a perfect dish for a special evening.

Accented with truffle oil
The hot appetizer, reminiscent of a white Christmas, is based on white, with sautéed whitebait meunière and cauliflower velouté (sauce) garnished with gorgonzola. The falling snow is expressed with a mousseline made from milk, and pentas flowers are decorated as flowers blooming on the snow. The dish is finished off with a mellow truffle oil that gives off a scent that makes you feel like you are in nature.

Green apple and celery root salad
Perfect for a Christmas special, this lobster is rolled in a light pastry similar to puff pastry. Enjoy it with a beurre blanc sauce made from Muscadet, a dry wine with a refreshing citrus flavor that goes well with seafood. It is also served with a salad of apples, celery root, walnuts and pistachios.
