Scallop and dried shiitake mushroom terrine
Sakura shrimp espuma

A terrine made with scallop mousse and dried shiitake mushrooms, with a sauce of sakura shrimp bisque finished with an espuma and served with a rusk salad.


 

Kurose Yellowtail Mi-Cuit with Miso Aroma
Yuzu beurre blanc

This dish features Kurose Yellowtail marinated in miso, with the moisture and oil removed to create a chewy texture. The sauce is a beurre blanc with a hint of yuzu that tickles your nose. It is finished off with compote of new onions and uruy.


 

Braised lamb with early summer vegetables

The lamb is marinated in salt koji to add a Japanese essence, and served as a spring navarandagno (stew). The meat is very tender, and the main dish has a sour taste of tomatoes and a pleasant aroma of herbs. The dish is finished off with a colorful garnish of seasonal vegetables tossed in "kinome miso".

Almond blancmange and

Served with Sencha ice cream

The almond blancmange is made with "Wasanbon sugar" for an elegant taste. It is served with a sauce made from melon, which is in season from early summer, and sencha-flavored ice cream. The chrysanthemum petals give it a "Japanese" feel.
