Gouda cheese made from fresh milk from Sarabetsu Village in Tokachi, fermented with home-grown lactic acid bacteria, and aged for over a year in the Tokachi climate.
Brise de mer FAISSELLE (Brise de mer Faissel): Takanashi Dairy
This fromage blanc is made using flavorful raw milk from the Konsen region of eastern Hokkaido and served in a colander.
Mozzarella: Rakukeisha, Shiranuka-cho, Hokkaido
This mozzarella cheese is made using traditional methods from the Battipaglia and Eboli areas of southern Italy, and has a smooth flavor tailored to Japanese tastes.
