We will be hosting "SPLI Sake NIGHT Vol.3 - A Night with Vignerons" an event where we will be welcoming Yuichiro Yamada, the cultivation and brewing manager at the winery "Yamada-do" in Yoichi-cho, Yoichi-gun, Hokkaido and experiencing natural, high-quality table wines.

Hokkaido The third edition of Spli Sake Night will be held in collaboration with Yamadado, a winery that produces natural and high quality table wine in Yoichi Town, Yoichi County. Hokkaido In 2011, Yoichi became the first special wine zone in Japan, Surrounded by mountains on three sides, the hills overlooking Yoichi Bay are a grape-growing region and boast the largest harvest of wine grapes Hokkaido. The event will feature Mr. Yuichiro Yamada, head winemaker, who will share the story of winemaking in Yoichi and his vision for the future.

We will prepare one plate per person with an assortment of dishes using ingredients from the Niseko-Yoichi area, known as a treasure trove of gourmet resources. These dishes, created by head chef Tateno with the desire to "enjoy Yamadado's wines in a relaxed atmosphere," include soft-boiled egg glugs garnished with "Kita Kohaku" karasumi, which is characterized by its soft saltiness and aged aroma, mizu yokan (a sweet bean paste made from local apples) and Hokkaido Camembert, rillettes made from "wine pork" (Kanekita Kitajima Farm, Yoichi Town) that is raised on a diet of wine grape pomace, and prosciutto from Charcuterie Akaishi (Niseko Town).
