Awakening children's "five senses" through food! TOKYU HOTELS Executive Chef Yoshihiko Fukuda gives food education class at Tokyo City University Elementary School

TOKYU HOTELS & RESORTS CO., LTD. (Shibuya-ku, Tokyo; President and CEO: Jun Murai) will be in charge of teaching nutrition education 12 times a year at Tokyo City University Elementary School, which is run by the Goto Ikueikai Educational Corporation (Shibuya-ku, Tokyo; Chairman and CEO: Yasuyuki Izumi). The first class was held on April 24, 2023.

This food education program is a special class for fourth graders at Tokyo City University Elementary School, with the aim of helping children develop healthy bodies and rich minds and humanity. The program is supervised and taught by Yoshihiko Fukuda, Executive Chef CERULEAN TOWER TOKYU HOTEL and TOKYU HOTELS.

The 12-part class, entitled "TCU Taste Lessons Fukuda Method: Aiming for Children's Food Independence and Development of the Five Senses," begins with the basics of the five senses, and covers topics such as umami, a part of Japanese food culture, and how to distinguish ingredients. Rather than simply listening and memorizing, the class offers fun learning through experience and fieldwork. In the latter half of the class, a joint class will be held with an external lecturer who is also active in the media, making it a fulfilling program.

The first theme on April 24th will be "sense of smell."
Using a cup filled with vanilla beans, the class had the children think about what it smells like, what it tastes like, and what's in it, without being able to see what's inside. The children listened intently to the teacher's explanation of "smell and brain memory," and many of them made comments like "It smells sweet!" and "It smells like cream puffs!", making it a fun and thoughtful learning experience.

As a food company, TOKYU HOTELS & Resorts will continue to not only provide delicious and enjoyable food, but also contribute to the development of food culture and the promotion of healthy bodies and minds through food education and other means.

"Food education" has been gaining attention in recent years due to social changes, but it has been an established form of education in Europe for a long time, and in Japan it was also practiced naturally in the home in the past. At the heart of it is learning the "appreciation of food." The fourth grade of elementary school that I will be teaching this time is said to be a time of great change and growth both physically and mentally, and "food" is a very important factor in supporting that growth. Through a one-year program that will teach with fun and surprise, I hope to activate the children's "five senses" and convey their interest in food, the joy of eating, and the importance of food. I hope that this will lead to the healthy growth of the children.

He was appointed executive chef CERULEAN TOWER TOKYU HOTEL when it opened in 2001. Since then, he has led and overseen the food and beverage department as the hotel's general producer for food. His dishes, created with a rich sensibility, are aggressive and passionate, and his attitude of always striving for greater heights and never forgetting his spirit of challenge has earned him great support from customers. Under the theme of "cultural exchange," he is friendly with notable people from various fields, including the culinary world, as well as cultural figures, opera singers, and wine makers, and has hosted many dining events in collaboration with them. He is also actively involved in food education activities, aiming to help children become "food independent" and "develop the five senses" through food.
He continues to play an active role as a driving force behind the food scene at TOKYU HOTELS nationwide and as an opinion leader on Japan's leading food culture.

2017

Appointed as the 7th president of the general incorporated association "Association Escoffier of Japan."

2018

He was awarded the "Officier of the Order of Agricultural Merit" by the French government for his contributions to the spread of French food culture.

2019

He became the executive chef TOKYU HOTELS.
In the same year, he was awarded the "Contemporary Master Craftsman" award by the Minister of Health, Labour and Welfare in the 2019 Award for Outstanding Skilled Workers.

2021

He became the sixth president of the French Agricultural Merit Association (MOMAJ).
In the same year, he was awarded the Outstanding Technical Advisor Award by the All Japan Chefs Association (general incorporated association).

2022
