Pudding de Kawazu, a sweet associated with the full moon
A rich-tasting pudding handmade by a pastry chef using milk from Izu, egg yolks from Shizuoka, and vanilla beans from Madagascar.
The pudding is made with full moon salt from Kawazu, Izu. It is said that "the minerals in seawater are at their highest on a full moon day," and the salt is made using seawater collected on a full moon day, heated over a fire in a handmade three-tiered pot for a week. The salt has coarse grains and a mild, rounded taste.

Full Moon Salt Kawazu Town is surrounded by the sea, mountains, and abundant nature. "Full Moon Salt" makes full use of the blessings of nature. It is said that the minerals contained in seawater are enriched on nights of the full moon. This salt is made using a unique method, where seawater collected on nights of the full moon is boiled for a week in a four-tiered pot. Amagi wood, which would normally be discarded, is used for the boiling process.
This full moon salt can be enjoyed at "Pudding de Kawazu." It is a mild salt with coarse grains that brings out the rich flavor of the pudding. Please give it a try.
