The autumn potageur récolte (garden harvest) is a prayer for the recovery of Noto, and features seasonal Kaga and Noto vegetables. A galette dough made with buckwheat flour from Mt. Hakusan is topped with fragrant salsiccia stuffed with smoked Kaga vegetables, accented with butternut squash puree and grape sauce. Enjoy the texture of the buckwheat in the pot-au-feu, which uses vegetable and mushroom broth.
