Cheesecake

A special cheesecake for Christmas made with three kinds of fresh cheese, fromage blanc, mascarpone, and cream cheese, accented with sweet and sour orange flavor. On top is a chocolate sled that runs gracefully across a snowy plain, creating a holy night filled with joy and hope.

Buche de Noel

A traditional French Christmas cake with a lovely shape reminiscent of a tree stump. The surface is covered in chestnut cream, and the sides are skillfully decorated with a wood grain pattern, giving it the shape of a log. On top, vanilla and blond chocolate cream is placed in the shape of a mushroom, a symbol of prosperity, and French chestnut compote is placed in the shape of a chestnut burr, creating a cake that evokes the breath of the forest. The sponge is made using rice flour and chestnut flour.

Stollen
This stollen is filled with Italian mixed fruits and walnuts that have been soaked in brandy and rum for over a year. After being baked until moist, it is soaked in clarified butter to further mature, resulting in a deep, mellow flavor. The stollen is completed over a long period of time with great care, and the surface is covered in snow-like vanilla sugar and powdered sugar, giving it a stylish square shape. We recommend cutting it into slices during the Advent period leading up to Christmas and enjoying the deepening aroma and flavor.
