Head chef Karamatsu Japanese Cuisine
Wataru Saito
Karamatsu was established as a Japanese restaurant inside SAPPORO EXCEL HOTEL TOKYU in 1995. With the arrival of a new head chef, we have completely revamped our menu.
Based on the theme of "Wajo-bimi," a coined word that combines the four elements of harmony, purity, brewing, and deliciousness, we will express the fusion of wine and Japanese cuisine, and create a new gourmet experience. Please enjoy the new flavors created by the combination of Japanese cuisine made with carefully selected seasonal ingredients from Hokkaido and a wide variety of domestic wines tasted by the head chef himself.
Profile: Wataru Saito
Born Chiba. After graduating from high school, he decided to pursue a career in cooking. He has trained under renowned chefs and worked as head chef at numerous hotels and traditional Japanese restaurants, and has been at the forefront of Japanese cuisine for many years. In order to broaden the possibilities of Japanese cuisine, he has turned his attention to Japanese wine, and is working to popularize Japanese wine and research its pairing with Japanese cuisine.
